Last ditch effort to save brand loyalty here but I have just about exhausted my patience with Fitbit products. The Versa has had nothing but connectivity issues and bugs since I've purchased it. I just went on vacation and came back to charge the watch and now it's just stuck on a date from two weeks ago. Tried all the troubleshooting suspects... Restart watch, restart Bluetooth, restart phone, unpair, repair, uninstall app, reinstall app... I'm done. This is just a regular thing to get this tech working and now it seems like it can't even do it's job as a watch. So... If anyone has any solutions to get this thing to sync I'm giving it to the end of the day before I start researching an alternative.

A warm welcome to the Community @zombiebovine.
I appreciate all the efforts in trying to fix this issue. If your Versa isn't showing the correct time, I recommend changing your timezone to a complete different one, sync your watch, put the correct time and sync again. To change the timezone, follow the instructions provide in the help article How do I change the time on my Fitbit device?.
Now if the issue is directly, follow the steps in the help article Why won't my Fitbit device sync?, once it syncs the time will correct automatically.
Let me know the outcome.
