I was just curious, in the Exercise app, there's several options for specific exercises (Running, Swimming, Weights, etc.), but at the end, there appears to be a generic "Workout" option. I'm not entirely sure what this option entails, or why I should pick it over some of the others? Is it just a generic catch-all for anything else besides the other options?

Yes, it is a generic catch-all for other types of exercise. It also has the benefit of allowing you to rename the activity in the web dashboard, which the other modes don't allow.
So you could do a crossfit workout, logged under Workout, and then rename it to crossfit later. It's very helpful in categorizing your activities. Hope this helps.
