We are trying to pull in real-time heart rate or activity data, however it looks like it depends on how often the app syncs with the devices. We were wondering how often the automatic sync happens and if there is a way to change that and have it update every 30s/minute or so.
We are using the Heart Rate Time Series Intraday API - https://dev.fitbit.com/build/reference/web-api/heart-rate/

You can get near-real-time data from Fitbit OS devices (Versas, Ionic, Sense) using the device and companion APIs (but not the web API).

@vanand- On Ionic, Versa and Sense watches not sure that syncing has anything to do with it. The watch needs to be connectable. Try the SimpleCheckUp app from the gallery which clearly demonstrates the difference.
Furthermore the capture of data from the watch can be done real time and saved on the watch - the transfer of that information is a secondary issue possibly.
