Two days ago when I checked my Sleep, the display has totally changed to a useless screen that doesn't show the REM or Deep sleep amounts or frequencies. It doesn't resemble the previous display and has dropped out all the info I would look at every morning. How do I get the old display back? What changed? Is there something wrong with my Sense? Or is this another really bad update? Anybody have this issue?

I'm having the same problem. My Sense 2 always showed a sleep score until recently. Switched back to my Sense and got a sleep score for 1 night, then no score, so went back to my Sense 2. Tried rebooting Sense 2, uninstalling fitbit app and reinstalling and nothing. My android phone is a version 12, so that shouldn't effect it. This is very frustrating.

Hi @BInthewoods and welcome @ddisney06 to the Fitbit Community! It's great to have you here!
Let me help you with your sleep data on your Fitbit app.
If you received a sleep log that includes only your sleep pattern (time asleep, restless, and awake) there may be some reasons why this is happening.
I recommend to read our help article What should I know about Fitbit sleep stages? below the section "Why aren’t my sleep stages showing up today?"
You may also tap on sleep record you received and you'll get an explanation why you received that instead of a full sleep stages summary.

Same thing occurred to me beginning Feb 17th, i.e. last Sunday was the last day my Android phone FITBIT displayed the complete sleep profile. A week or so, most tracking was lost. I finally figure out that there was no longer a connection, WIFI or Bluetooth between my Google 3 pixel watch and phone. Restored the watch connection, and after a few minutes transmission, the data reappeared for the previous 4-5 days lost.
So, I checked that, and it doesn't appear to be the issue. I also noted that somehow, the watch had slipped into "Airport" mode, which would explain the WIFI disconnects. I haven't intentionally set Airport mode, and am seldom in the setup section of the watch.
I rebooted the watch as a preliminary de-bugging option. No joy.
So, bottom line, I wouldn't buy a FITBIT device or spend $350 on a Google Pixel 3 watch again. Buggy, unreliable technology for way too much $$$. As we used to say way back in the old days of IT, it's "vaperware", not a mature technology.
One more thing to add, since I AM ranting at this point. The FITBIT ECG app for AFIB suffers is (a) a unmitigated lie, and (b) useless. The first thing FITBIT tells you (via questionaire) is that if you have diagnosed AFIB, you can't use the app. Then if you lie (which presumably, their lawyers expect most AFIB users to do), and activate the app, it's (1) unreliable, can't get a reading even when manipulating the watch on your wrist, and (2) when you're finally able to get a reading, it's (likely) after the AFIB event, so it's not measured, or (3) at best, it'll tell you something to the effect that the result is indeterminant. I'm sure the App worked in the lab, under laboratory conditions, so that marketers could rush it out as "AN APP THAT EVEN DETECTS AFIB!!", but again, it's vaporware, a useless app that will never work in the real world.
All that said, I see promise in the technology, which admittedly, I don't use half of what's available, but maybe in 5 years, 10, maybe 20 years, it'll be a useable consumer tech. (Disclaimer: I'm no tech guru, but I was an IT developer & specialist for 40 years. I'm not the average tech user, i.e. I do know how to debug technology problems within apps.)
