I’ve synced and updated my sense 2 but the clock display time is still wrong. In fact it hasn’t changed and appears to be “stuck” on a specific time, even though date is correct and steps are tracking, etc. Is there a way to restart it??

Yes, there is a way to restart the Sense 2, if that's what you're asking. Press the button on the left (do NOT hold it down, this will take you to your Shortcuts) and scroll until you see "Settings". From there, select "Shut Down" and then "Yes". Once it's shut down, press and hold the side button again for about 10 seconds and it should come back up.

Hi @Andi77 - as @DramaQueenDiva suggests, a restart may resolve it.
A quicker way is to pull down the watch face, click Settings (gear icon) and follow to Shutdown.
It may auto restart after some seconds or you can just push the button and wait a few seconds.
Also consider changing the clock face because if it is not a Fitbit one it may not have been fully tested for this watch as developers can't test yet.
