Is it possible to remove some of the exercises choices from my exercise tile on my watch?  I never do pilates, bootcamp, elliptical...for example.

I don't think you can remove any,  but after you use any exercise choice, it will go to the top of the list, with your most recent choices at the top, so you should not have to scroll through the others after a few days of use.  You could even fake these to the top now by saying for instance that you are starting a 'Walk', then stop it after a minute.  Then Walk should go to top.
