How do I get the Sense to stop asking me to setup voice assistant?

Did you try setting it up? Maybe that will stop it. 
Or you could try resetting the watch by holding down the side button until the Fitbit logo appears then release and allow it to reset.

Just to make sure that Alexa/Google is disconnected, please try the following steps:

 

  1. From the Today tab in the Fitbit app, tap your profile picture > your device image.
  2. Tap Voice Assistant > Amazon Alexa / google> Logout > Log Out.
