WATER - after logging water on the Sense device it does not reflect the correct amount remaining. It also does not show water logged in app.
TEMP - temperature logging is an option from the Today app tile. When swiping up from the Home Screen to see the Today information, temperature logging is not an option. Only water & weight.

I was coming here to get kore info about water monitoring too. I have a hidrate spark water bottle linked to my fitbit app. It automatically updates my fitbit for me. However no matter how much water is reflected in the app, the watch still says 0.

It appears the water sync is just one way. If water is logged on the FitBit Sense, it will show in the phone app but, water logged in the phone app does not show on the Sense. Therefore no amount of water remaining to drink is shown.
Hopefully FitBit sees this soon and a fix is in the works 😃

I have Android and this is broken on the App on my phone. When I log water in Fitbit app on Android it doesn't show on my "Today" dashboard, when I click into it I can see it. But no matter what it won't display on Dashboard. But when I log out of the app and log back in, the water I logged is gone. So there is an issue in the Fitbit App for Android where logging water doesn't work.
It's also broken now on the Sense itself, when I log water and save it shows for a second, but if I go back to watchface and then back into "Today" it shows 0 oz even though I just logged some.
So for Android it would appear logging water intake is completely hosed right now and doesn't work either in the Fitbit app or on the Sense directly.

UPDATE: I restarted my Android device as well as my Sense and now logging water works both ways. Meaning I can log in my Sense and it now displays under "Today" on the Sense as well as on my dashboard in the Fitbit mobile app. Similarly if I log water in the Fitbit mobile app it syncs and displays on the Sense.
The only thing the Sense displays is how much water you've logged, it doesn't display how much remains towards your goal, or what your goal is. It displays a circle that fills up as you meet your goal but doesn't tell you what your specific goal is or how much remains. This however is how it was designed, not "broken".
