My Sense Controls don't stay connected. I have tried everything. I looked up the answer and tried suggested solves
Turn off phone - reconnect fitbit
Turn off bluetooth - re-pair
It connects and stays connected for a short while but disconnects quickly.
Any ideas?

Have you tried rebooting the Sense? Mine did the same thing a few weeks ago, turns out it needed a reboot.

Do you receive calls, notifications, etc?
I have and iPhone 6s Plus and I too got frustrated that the sense controls will not stay connected.
The key is they are not supposed to stay connected. They connect when a call comes in or notifications. Forgive me if you have the manual or gone through these steps but make sure you have done these steps and you should be able to get the functions you want.
