For the past two nights, the EOV graph under the Restoration tab, is not displaying any information, but I do receive an average SPO2 percentage score the following morning
and the red light is visible throughout the night

Hello @Swdecord It's great to see you around! Thank you for the information that you've provided.
I would suggest you to log out and back into the Fitbit App. If that doesn't resolve the difficulty, please force quit restart the App on your mobile device. If you have an Android, you can proceed with the following:
1. Open the Settings app on the Android device.
2. Scroll the list and tap Apps, Applications or Manage apps.
3. (optional) On certain devices like Samsung, tap Application Manager.
4. Scroll the list to find the app to force quit.
5. Tap FORCE STOP.
