So since my Fitbit Sense died after the update that Fitbit won’t do anything about, I haven’t worn my watch, however I haven’t deleted the app as I have their scales which are just as hit and miss. When checking my weight in the app today I noticed my Fitbit is tracking steps, how can it? I’m not even wearing it! I have bought something else in disgust at their service and I have lost trust that another update wouldn’t screw up another product. All very weird if you ask me.

Your Fitbit app most likely is set up to use Fitbit MobileTrack, which uses your phones motion sensors to track your steps.
If you really want to disconnect your phone, you can do so by first tapping the Devices icon in the upper left of your Fitbit app's Today page. Then just tap the Smartphone tile and disconnect it afterwards.
