Hi, @Arethusa29 welcome, you do not mention if your Sense had been paired with your phone previously so please forgive me if you have already gone through these processes. These articles explain setting up and troubleshooting How do I set up my Fitbit device? and Why can't I set up my Fitbit device? This video takes you through the process step by step.
I would also suggest you check the Fitbit app settings in your mobile phone (I'm not familiar with apple phones so please excuse the lack of detail) In the app make sure all permissions are allowed and that battery optimisation on the phone is turned OFF. This later advice is to prevent the phone from closing down what it thinks is a non-essential app.
I hope this is helpful but if you are still stuck please post here again with as much detail as you can.
Cheers
