The display seems stuck on DIM on my Sense, when I find it it is so hard to see but when I select normal or brighter it won't change

As @JohnnyRow has mentioned, it seems that you've set your Versa 3 into Sleep Mode. When the sleep mode setting is on:
To turn off Sleep Mode, please swipe right from the clock face on your watch to access the quick settings. For more information, see How do I navigate my Fitbit device?

I could be that you are accidentally in 'Sleep Mode' that intentionally keeps the screen dim. That can be found in Settings > Quiet Mode.
