Got the Sense yesterday. I have found it is very picky about what Bluetooth devices it will find to pair with but that is not the main problem. I did get it to pair with my B&O headphones but when I try to play music with the Spotify app (the app runs fine), none of the Bluetooth devices I have been able to pair with (or am paired with) even show up as an sound playing option!
What is even weirder is that what DOES show up as a playing option is my Apple airplay device (third party) for my house's speaker system. Spotify WILL play thru that!
Bottom line is what DOES show up as a play option in the Spotify app is a network-based connection and what does NOT show up is anything Bluetooth. Since pretty much everything you want to use to play with a watch is Bluetooth based, this makes Spotify useless on the watch.

FYI, the phone is a Pixel 4 XL....

It turns out that it (Spotify app) will connect to almost anything on the network (Phone, Goggle Home, Airplay, etc.) but not directly to anything Bluetooth. Since this is typical behavior for the Spotify app on a phone or PC, I suspect the watch app is no different.
So it will play to a Bluetooth device but only indirectly thru the phone. It would be much better if direct Bluetooth were available. In fact, it makes one wonder why you even need Bluetooth on the watch if you cannot play to a device via Bluetooth. Maybe other non-Spotify apps will play direct Bluetooth.

The spotify app on the Fitbit tracker will only control the spotify app on your phone. Therefore your headphones need to be paired to the phone.

I get that, but it seems kinda not worth the trouble if it cannot do direct Bluetooth. If I gotta have the phone anyway, I will use the phone - bigger screen and better controls.

Frankly, I bought this because of the SPO2 that has been missing from my Sammy Active 2. The SPO2 works but is lamed by only working at night and every other feature is better on the Sammy. I would list them but It would take all morning. suspect I will only wear this at night for SPO2 and the Sammy for everything else.
I really expected better from Fitbit and am really disappointed when I compare it to a watch that is a year older and still 2X better and about the same cost. They could have and should have done better for the price.

Then why do they even include a feature to pair the watch to the headphones?

Exactly.
I successfully managed to connect Sense to Soundbar - then in Music app I choose 'control music with watch', then enable soundbar as a device.
But then when I start Spotify soundbar is nowhere to be found...
I am a bit dissapointed - it does make sense that a direct connection between watch and device could be made so I can control music with watch (if eg I dont have a phone around).
I wonder if it is something that Fitbit is going to look at.

So my new Sense is really disappointing on this issue. There is a Spotify app on the sense but when you tap it the response is to activate it in the fitbit app. Of course that is part of the problem: to use Spotify on fitbit requires a premium spotify subscription.
