I’m having intermittent issues with notifications on my sense from WhatsApp. Under my profile, selecting Sense and then attempting to select notifications, it doesn’t allow me to do anything... doesn’t click through to anything. All of the other options work!

are you using an iPhone?
There is currently a known issue with the Fitbit iOS App: You cannot access the notification settings.
Fitbit is already aware of that. Please be patient to have the issue fixed.

I don't get any notices between my Note 20 and my Fitbit. It started three days ago. I have turned off the phone, turned off the Fitbit, uninstalled the app from my phone, relinked WiFi between my Fitbit and my phone, crossed checked all my settings on the phone and Fitbit and still nothing. No incoming calls, no WhatsApp notifications, no email notifications, no calendar notifications, no Fitbit notifications. Very frustrated. HELP! NOT HAPPY.

have you configured your notifications within the Fitbit app?
Have you allowed the Fitbit app to access your notifications from the Android system within the Android settings? If not you first have to grant permission that Fitbit can access and forward the notifications.

I don't have the exact settings for Samsung as I use Huawei. But roughly these Android settings could solve your issue:
To get started restart both phone and watch.

That the notifications are working for a few days is a typically behavior that some power saving settings does not apply shortly. They will apply as soon as you have the Fitbit app closed / or not that many times reopened, or your smartphone battery reaches the critical level (like less than 20 %).
Please note that most of these settings above will be gone if you uninstall the Fitbit app. So good to hear, that you have redone all the settings (not only within the Fitbit app but also in your Android device settings) after reinstallation.
Does your Sense synchronize at all? Do you see any error shown within the Fitbit app like "to get notifications working restart your phone"?

For some a reinstallation helped. That's something you can try - if this doesn't help, please be patient to have a fix applied with the next app update.
