Rather than disabling GPS, just choose one of the exercises that don't use it, for example "treadmill run"
See page 19 of the manual to find out how to tell if they use GPS or not.

But if I set it to "treadmill" it won't properly track a hike or walk activity correctly will it?

It will track just fine. You won't get a map without GPS and distance will be measured by multiplying your steps by your stride instead of using GPS but your steps will be the same.

@CLRADOfor a Hike or a walk select that activity. You might need to go into your settings and set up different shortcut exercises so they show on your device. But you should use the activity that you are doing.
Some are not there so you would use Workout mode for that.
