Last night (Friday) I had 50,000 steps so far for the week and when I turned it on this morning (Saturday) it was down to 40,000. How in the world do 10,000 steps disappear overnight????

I'm assuming we are talking about the steps total as shown on the friends tile.
If so, this tile shows the total steps taken so far today plus the total steps for the previous 6 days. At midnight each day the oldest day's steps are removed to make way for the new day. It is a rolling 7 day total so, once you have at least a week's worth of data, your total will always go down at midnight.
