Is it possible for the info from my versa 3 to also be linked to Apple health? Is there a way for the two apps to talk to each other?

I appreciate your comment. If you haven't done so yet, I'd suggest you check this article on How to connect your Fitbit account with another app?. Some users usually find it useful to unpair and then pair both apps again to refresh the performance, if you have both apps already paired.
If this doesn't work you can always contact our Support Team or the third party developer.

The direct linking between Fitbit and Apple Health (conversently on Google Fit for Android users) has been ruled out by Fitbit. You might get some answers by some long time Fitbit users that it's up to Apple to implement such function but then why not Fitbit and at the end we, users, are caught in the middle.
What you can do is to use a third party app that works as a middle agent.
I'm not a iOS users but a research I made gave me these options (granted, there might be many others):
