Calories in vs out explanation

So... I am just confused how this works as I start tracking my calories. 

Firstly, it won't allow me to set my goal, which Fitbit have confirmed is a glitch on the app for some people and are working on it. So I will provide the information as I have it:

It is currently 12.30pm and I have burned 1,141 calories today. I have eaten 768 calories so far. But when I go into the Food details, it tells me I have 123 calories "left for the day"? 

The goal is set at 1843 (which I want to change to 1600), so how can it be telling me I only have 123 calories left for the day?

Even with current in vs out there is a 373 calorie defecit?

Does anyone know how to explain this, very simply for me?
