From phone app Today screen:

Profile pic (top left) > App Settings > Clock Display Time > 12 Hour

except for a few third-party clock faces

But @Odyssey13 beat me to it, and I must have been very slow on my research.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.

Hi @cchaos - there are many place where time is shown and not all of them can be adjusted, for certain Always On displays [namely the built-in one] or weather and possibly some clock faces it may not be possible to change it. Some may have their own settings in the Fitbit App Gallery tile.
