How do I reset my Fitbit and account on my phone to how it was when I started so everything is at zero

To better assist you, would you mind sharing with us the reason as to why you want to start from scratch? Depending on what you need, please take @Odyssey13's advice into consideration.

Keep in mind that you can delete your account, but you can't create a new account with your current email immediately. Fitbit gives you 7 days to change your mind, then it can take up to 90 days to completely delete your old data. You can start your new journey with a new Fitbit account.

Hi @SunsetRunner the fastest way is to get a new account and set up your device as a new device on a new account. That way you'll start fresh without having to delete all the old data AND you can always still see your old progress on the old account, if you want to compare them.
