I've already de selected all activities in the "Auto Recognized Exercises" section, but it still auto-starts whenever I take a walk

Go to the on-wrist Exercise App; select Walk; swipe up through options and turn off Auto-Start.  That makes it act as if you had started it from the Exercise App, and all associated options, a few minutes after it recognizes it.

Before posting, re-read to see if it would make sense to someone else not looking at your Fitbit or phone.
