What function actually turns the screen off?
It seems the only way is to wait for the display timeout to be exceeded [default 6 seconds] or to lower your arm.

I found this in the manual:
"To turn off your watch's screen when not in use, turn your wrist away from your
body. If your screen wake setting is set to Button only, the screen turns off when
you stop interacting with the watch."

Yes, it seems the button can no longer turn off the screen, like it does on prior watches.

Yeah. It is one of the first few things of difference I noticed when using the watch.
IMHO, the manual also made it so complicated. Basically it is saying you cannot turn off the display but have to wait for it to turn off on a timeout.
I think many users will wonder the same.
