Currently have older device (Charge HR). The calorie export is minute-by-minute. (see below)

I know the AW (apple watch) can record more granularly, especially if in workout mode. Example:

Question: Do any of the latest fitbit devices have this level of granularity (in seconds)? I don't mind doing an Data Export or hitting WebAPI (since personal use only). But I want to make sure the device I buy has this level of granularity.

Welcome to the forums!
All of our devices track calorie burn, but for the best results, we recommend getting a device that is heart rate enabled (such as Inspire HR, Charge 3, Versa family, and Ionic).
We do support granular sampling of calories burned, but not in 1second detail-level. The smallest we offer is 1minute or 15min granularity through the Get Activity Intraday Time Series endpoints.
The only data we support with 1sec or 1min detail-level sampling is heart rate, which you can see through the Get Heart Rate Intraday Time Series endpoints.
If you'd like to test the endpoints, I recommend using our Web API explorer. You can follow the steps here.
