Status 500 on activities/heart

 My script that fetches fitbit data started failing since around 25th January.

Many other APIs work fine, like sleep/minutesAsleep, activities/calories and so on, but activities/heart is consistently having issues.

Response: An error occurred with the Fitbit Web API while processing the request. Error id: A29EA736:38A6_A92D912D:01BB_5C4FB88F_694EFDFE:7EA8

There was no change on my end (in code or libraries) for past few months.

I think I've reproduced your problem.  I'm not able to find any detailed information on the error message.  I know we have a limitation on the amount of data that can be returned by the time series endpoints.  Would you try shorting the timeframe between the begin and end dates to see if that fixes the problem?  I would recommend fetching in 6 - 12 month periods.
