I have a versa 3 and on Saturday the Fitbit app asked me to sign in and I have lost all of my data even though it says I have had the tracker since Nov 21
also I had a charge 2 linked to an old Vodafone. Email that is now defunct that data had carried over but now just shows from Saturday till today where does that data go?

First and foremost it’s extremely strange that your “Fitbit App asked you to sign in” I’ve been a member since 2018 and I’ve never been requested to sign in. How did this request come in? By email?
The Fitbit App will never request you to log in so I’m uncertain what actually happen. I hope your account didn’t get compromised in someway.
I think your particular issue should be addressed by Fitbit Customer Service. You can contact them here:

I had to sign in, too, with a new password, and saved exercises were gone, and app not working properly.

They're not the only one. Same happened to me.
