Trying to Sync with iPhone 5s. I get to the page, "Which tracker are you setting up?" and I click "Alta" next screen says, "Uh-oh! Yyou need to update to the latest version of the Fitbit app...." I click at the bottom "Update the Fitbit app" and it takes me to the Fitbit app update screen which says "Open" no option to update.

Let me help you out, check that your mobile network is working properly, then check on the updates on your Appstore and reboot your mobile device.
