Over the last month or so, I’ve experienced an increase in the app freezing and requiring multiple closures before I can successfully access certain data once synced. Also some data has not been captured appropriately, sleep times/moments and various workouts

Regarding the freezing and missing data issues that your Fitbit app has experienced, please make sure that phone has the most recent Fitbit app version installed. If the app is up to date, try logging out of the app, restart your phone, open the app and log in.
After this, restart your Fitbit device as described in this help article. Finally, monitor your Fitbit device, the app and see it it stops freezing and it shows the correct data.
