I have the latest version of IOS and tried following the instructions to update the app to get my Blaze to sync. Only no 'pink' update app to try tapping... ? I really just wanna know how I slept 😂

Thanks for bringing this to my attention, have you restarted your Blaze by pressing and holding the Back and Select buttons (left and bottom right) until you see the Fitbit logo on the screen and your phone already? If so, I would like to suggest you to check the following:
