Last night my charge 3 (has worked fine since receiving it 1/2019) started to blink and vibrate and the screen was unresponsive. I attached it to the charger overnight and it was still unresponsive this morning. Followed all troubleshooting I could find. The display works now but I cannot set up on the app. My iPhone can locate the tracker but it won’t pair. A new 4-digit code continues to appear and not work.
Do FitBit trackers no longer pair with iPhones?

I dug around a bit to see what I could find and I think doing the steps described by @MarcoGFitbit in this post here: https://community.fitbit.com/t5/iOS-App/Charge-3-not-syncing-with-iPhone-iPad/td-p/3240123 could certainly solve your particular issue.
