Just updated my Fitbit to the latest iOS and now it’s stuck on the Fitbit logo, won’t pair, won’t restart, won’t do anything. Anyone else have this problem?

I'm not sure if you are still experiencing this situation. Please, follow the steps listed in this article to set up your Charge 5 as a new device.
