Not sure if this is a me problem or a problem with the latest update of the iOS app. I used to be able to see my current heart rate next to my resting heart rate when I had the app open. Now it only shows my resting heart rate.

Thanks for confirming that the Fitbit app has been updated and let me help you with your heart rate data. Since the current heart rate is the one missing, I'm wondering if you've the Bluetooth enabled and your Fitbit syncing with the Fitbit app. Your Fitbit needs to be connected with your phone so your data can be updated in real time. In line with this, make sure you don't have multiple Bluetooth connections that may interfere with the syncing process.
