The exercise says 30 min. even when I edited the exercise details to 40 min.

Thanks for bringing this to my attention. Sometimes it takes the app a bit to update the information you have just edited, which is why I would like to suggest you to force-close the app by double tapping the home button on your phone and swiping up the app. Then open the Fitbit app and check if your exercise's information has updated.
