What fitbit model do you have?
Given that fitbits are pedometers that primarily track steps it's not that surprising to hear that it doesn't handle snowboarding very well.
As it doesn't know you are snowboarding it has to assess your effort based on the steps it senses. The way round this is to tell that you are snowboarding and we do this by manually logging the activity:

You get a set of stairs whenever your fitbit detects a rise in elevation of 10 feet based on changes in air pressure. You needn't be going up stairs, going up a slope counts too. Unfortunately, we can't delete these.
