Other than steps and sleep, none of my categories are loading onto the app and trying to look at workouts causes the app to freeze

I'm sorry for this inconvenience, and thanks for letting me know about this. I'd like to share with you that our team is currently rolling out the Fitbit app version 4.45 which should fix this issue. If you haven't done so, please go to the App store and make sure to install it as soon as you see it available.
Once this is done, try navigating through the Fitbit app as you usually do and keep me posted on the outcome.
