Unless I stomp around, wearing shoes, Fitbit misses a lot of my steps. Is there any way to adjust my settings? I don’t always want to walk around in shoes, and I don’t always want to stomp even when wearing shoes. Thank you.

Without knowing the actual device you have and how you wear it, it is a little difficult to give advice.
However, I can tell you this:
I wear my Alta HR on my wrist and my wife wears her Alta on a belt clip. They both accurately measure steps while walking around the living room in socks. And we just verified that again before I responded to this post. We checked out the device's steps, counted off approximately 50 steps each (different step lengths) around the room, checked the device's steps again. Both devices counted each step taken.
I just did a test walking in a manner like I was trying to sneak up on someone with my Alta HR on my wrist and my wife's Alta on my belt. My wrist worn device got every step, the belt worn device missed some. But that was me exaggerating my "stealthiness".
I suppose if you wear a belt worn tracker, are very slight and walk very softly, it is understandable you would miss steps. I assure you, if you match the second criteria, there are a lot of jealous people in the world that wish they had your problem, me included.
