Not sure what happened, but some of my custom food servings now show up in japanese characters
while others are still in English. Anyone know why?

Hey @step2it nice to see you here! That is very weired. However, I recommend to log out from your Fitbit app and then log back in. Sometimes you just need to refresh the application.
Let me know how it goes and in the meantime I'm going to investigate!
