OK, I now know you have to log an exercise from within the app itself (if you want to see GPS route data), not just start it from the Charge 5. Weird, but OK. So now the only exercises are "Walk, Run & Hike", is there a way of getting Bike in there as well?

Hello @SunsetRunner and welcome to the Community. You should not need to start/stop the exercise from the app in order to get a map. I suspect you missed a step or setting on your Charge 5. Here is a link to the Charge 5 manual. Please recheck your settings and make sure you get the vibration that the GPS has connected before you start.
BTW, that feature you used is a much older way of GPS tracking, for older trackers that don't have an exercise app.
