I thought I'd contribute to our Community in case anyone else has this problem as I did 🤗
While the Fitbit app on iOS allows you to add an exercise, it doesn't give you the option to set the date to anything other than the current day. However, once you add the exercise, you can simply go back and edit it to change the date 😉

Hello @LangstonM and welcome to the Community. After you choose the activity name, you get a screen that looks like this:
Notice that you can select the day on the spinning wheels and you don't need to log it, then edit it. No extra steps required.
There is something you need to keep in mind if you do this and track your data closely. Please don't do this if you were wearing your Fitbit and didn't use the Exercise app. Your Fitbit estimates your calorie burn from its heart rate algorithm. Manual logging gives an estimated calorie burn based on a reference called The Compendium of Physical Activities. It will overwrite your Fitbit data to the same calorie burn per minute for the entire activity. This feature works best if you forgot to wear your Fitbit.
