A few questions -
I know you need you need to start a biking exercise session to log your bike miles but where do those stats go when you've finished the ride?
Also is there any way for it to auto pause/auto resume your ride if it detects you've come to a stop? If I'm stopping it's more likely something else has my more immediate attention as is.
Finally does cycling count towards your steps at all and if so how is that broken down?

@emeralds Welcome to the Community Forums.
Thanks for the detailed information shared in your post. Please note that most devices automatically track several exercises, including a walk, run, or elliptical workout. For more information, see How do I track my activity with my Fitbit device? However as you have mentioned you can start the bike activity directly from the Fitbit device using the Exercise app installed on it. Once you finish the activity you can see your workout summary on the Fitbit itself. Then you need to sync the device using the Fitbit app on your phone to see the complete details.
Note that once you start your activity using the exercise app, you will be able to pause it and then continue. You can find more information in our help article How do I track my workouts with my Fitbit device?
When you ride a bike on bumpy trails, your device may add some steps but they won't be significant when compared to your overall stats. Keep in mind that if you wear a wrist-based Fitbit device, it will register the steps based on your arm movements. See How accurate are Fitbit devices?
Hope this helps.
