So basically I was at my desk, using my computer, when my Fitbit (Charge 6) buzzed to notify me that I've met my daily goal for "zone minutes". Aside from the fact that this is weird, since I wasn't actually active at the time, how can I change this setting on the Fitbit app? Or do I have to use the Fitbit itself?

First of all, thanks a lot for taking the time to share your inquiries with us, I'll be glad to help you out.
With that said, keep in mind that you can earn Active Zone Minutes for time spent in the moderate (fat burn), vigorous (cardio), or peak heart-rate zones.
Sometimes, external factors like certain behaviors (smoking, high stress, some medications) can cause your heart rate to increase and be detected as activity.
