on the app click on ‘you’ at the bottom
then click on settings on the top right
scroll down to nutrition and weight
click on goal weight
usual choices from there.

Hello @Hickles and welcome to the Community. Yes, this can be difficult, because there are old posts that refer to older versions of the Fitbit app. The first step is to create a Food Plan. Here is a link to Fitbit's Help article with the relevant section expanded for you.
You start by tapping on your profile picture (Google account) or gear icon (Fitbit account). Now look for Nutrition & weight and tap on Food. Tap on Help me set a goal. After entering your starting weight and goal weight, then you see the four different calorie deficit options.
