Would it be possible to add elevation stats to the Fitbit app as this option only seems available online.

The only way for FitBit to know your elevation is via GPS. None of the FitBit models have altimeters in them. So unless you have the FitBit Surge or are keeping your FitBit in Connected GPS mode all the time it has no way of knowing your altitude.
Flights of stairs are calculated using barometric pressure changes.

I think it's more the data is missing from the app.
I cycled on Sat using connected GPS mode. Elevation data shown the Fitbit Charge 2, nothing in the app. I linked my Fitbit to strava and Strava shows the Elevation data.
It should be in the app really.

I thought elevation data used to be visible in the iOS app.
It definitely isn't now. But it's still available on the website.
If it's obtained from GPS, the elevation graph could still be displayed in the app just like maps are.
And FitBit devices contain a pressure sensor that functions as an altimeter, apparently with 10' resolution.
(See: help.fitbit.com on the altimeter for counting floors )
That's way courser than what's shown on the website, so it's probably not the source for elevation data.
Upshot: Dear Fitbit, give your users the option to display workout elevation graphs in the iOS app.

It really DID used to be a feature.
Once upon a time, the mobile app displayed elevation graphs.
Seems it was removed sometime in 2015.
And users have been complaining about its removal ever since.
So, if you're reading this thread, follow that link to the Feature Suggestion forum and VOTE for it.
The forum thread is closed to comments. But still open for voting.

A happy ending to this thread: As of today, elevation data is displayed in the FitBit iOS app again.
It's been there for a while, so this isn't exactly breaking news. I just wanted to include it here in this thread.
Looks like, after further consideration, that feature got re-released after all.
