Anytime I log an exercise such as biking or rowing machine, the app interface looks so jumbled and messed up to where I can’t even enter in the proper details, specifically the distance.

Thanks for bringing this to my attention as well for the screenshot provided. I'm sorry that the options to enter your distance aren't shown correctly and let's work on this together. To further investigate, please confirm the model and OS/software version of your phone.
In the meantime, please give a try to the following steps:
Log out from the Fitbit app on your phone.
Check if the Fitbit app is updated.
Force quit the Fitbit app and reboot your phone.
Open the Fitbit app and log back in to your Fitbit account.
