Fitbit app takes a couple of minutes to refresh the details of my sleep log every day. I like the update that shows me summary info on my home screen, but when ok go to the screen that shows me detailed sleep info by time of night, that is where the delay is.

Thanks for the details shared in your post. I recommend trying the following:
If the issue persists and your device is running Apple iOS 12.2 or higher, please uninstall and reinstall the Fitbit app.
