A few days ago, I had a Fitbit update to my iPhoneXSMax and it had a sleek new look. It revered back to the old look this afternoon. Has anyone else had this issue?

Thanks for bringing this to my attention. A few weeks ago our team started to slowly released the new dashboard for the Fitbit app. This hasn't been fully released yet as we're testing it based on our users feedback, which may be the reason why you saw it before reverting to the common dashboard. As with all our new dashboard updates, this is a progressive rollout. Even though you don't have it yet, you will receive it later on.
I'll be around if you need anything else.

My sleep mode quit working Friday night. Has not registered sleep since.

Thanks, the new look came back. Now I need to my 250 hourly steps to properly sync with my phone.

@Osseogal and @DixieLou22, thanks for letting me know about the sleep tile not appearing on the new Fitbit app dashboard. To make sure that tile isn't hidden, I'd recommend to try the following steps:
If the sleep tile is still not appearing, please provide me with a screenshot so I can take a deeper look. To attach a picture, check the instructions from this post.
@BSuzD, I'm glad to hear that the new dashboard is back on your phone. I'm sure you'll enjoy the experience and to learn more about the new icons and tiles, check the help article: What’s the new Fitbit app experience? About the 250 hourly steps, do you mean that the information from the tile doesn't match with you Fitbit device? If so, have you made sure to have the "All day sync" enabled?

@BSuzD, thanks for getting back and making sure the All day sync is enabled. Our team is aware of this situation experienced with the Fitbit app not matching the hourly activity displayed on your device. They're working to identify a resolution as quickly as possible, and in the meantime, let me advise to keep both, your device and the Fitbit app updated so the rest of your information can sync correctly.
@Osseogal, thanks for the clarification, as well for bringing this to my attention. To further investigate, please share a picture of what is displayed on the Inspire screen when looking for the sleep tile under Today. For instructions to attach a picture in your reply, check this post.
About your other inquiry, your Inspire will automatically recognize your swim activities as long as they're longer that the time set in the Fitbit app. I'd recommend to check our help article which explains what factors affect the swim activity, as well to adjust the duration with the following steps:
