Can I not add to my food journal when I don’t have Internet Connection? I went to log my lunch, but couldn’t because we don’t have Internet.  This was kinda a bummer. Am I doing something wrong?

All your data is held on the fitbit servers rather than on your phone. So if there is no access to those servers you can't update your data.
