Keep having to reboot watch and reset Bluetooth every morning to get notifications. Bit of a pain.

I'm sorry you're having this inconvenience and just to confirm, could you check if the Sleep Mode or DND aren't turned on? I'm asking this as your watch won't be able to receive any type of alerts or notifications if these settings are enabled. For more details, see this help article.
