It's nice to see you around the Community @bgk, welcome aboard ! Hmmm... very strange let me say. Have you checked if the timezone on your Fitbit app is correct?
However, I'd recommend doing the following:

Thanks @MarreFitbit!! I appreciate the help! I just went back and deleted my first entries and then re entered them. And it worked!! So bizarre. Don't know why it was glitchy. Thanks for helping!

Try setting up your tracker as a new device by doing this:
Hopefully this does the trick @CashMoney!

Hi, how does entering an activity on your log solve the problem of your weight loss start date keeping on reverting to todays date??
I am having the same issue as @CashMoney I keep changing the start date and it keeps reverting back to todays date. I have checked the timezone, have uninstalled and reinstalled the app and it still keeps happening.

Hey you @K1r5tyd21, thanks for joining us! If you're talking about your weight, I'd recommend taking a look at this post of @EdsonFitbit for instructions. You can also check this one in case you get stuck on how to complete this process.
If you need more help, let me know or get back to me with some screen shots so I can go from there.

Hi,
I have the same issue and no suggestions in the thread fix it.
I go into the goal weight on the mobile app, and change start date to Saturday. I leave the view and go somewhere else, then come back. The start date is yesterday again.
The same issue happened every day since I started, where start date is just the day before. Is this a setting?

Hi, I am also having the same issue. Changing the start date to a month ago (Aug 9th), and it keeps reverting back to today's date (Sept 16th) no matter what I do. I've restarted the app & my phone. The time zone settings are all correct. My starting weight is correct.

You know what, I fixed it. I haven't seen this solution mentioned anywhere else, so I'll mention it here.
Thankfully I use a smart scale & app that that's NOT an aria, so I could cross reference things and have an un-f*&&ked list of data.
Essentially, I found wildly incorrect weights were scattered throughout my weight history on the fitbit system, which I believed happened every time I tried to edit my goal through the fitbit apps weight dash "edit goal" (not thru the hidden food goal edit). I had my start weight showing up over and over thru my weight history, as well as totally wrong weights (a kilo higher even) logged when I had data that stated otherwise - all caused by me trying to change the start date, and the fitbit app logging that as that current dates weight.
I went thru the weight history, corrected wrong entries and deleted the original start weights that were scattered all throughout, and VOILA! my start date was finally changed to the date I had been trying to set!! It seems the weight history is overriding the customised start date, and it grabs the latest date that it logged the goal weight (which will be today if you've been trying to fix it repeatedly with no luck!)
