I'm trying to log foods and the brand names are light gray on white. The very low contrast means that it is very hard to read, and that combined with how small the text is means that it is very difficult to read if you have any problem with your eyesight. I have to get out a magnifying glass to read the menu.

I 100% agree. It’s not easy to read with my 70+ year old eyes.

@RuthTimmons @Rge iPhone settings have some Accessibility features. Sadly, the options like bold text, larger text, and increased contrast don't work on the Food list pages. From my searching, these pages need a feature called Dynamic text. They don't seem to have it. 😞 I toggled all the toggles and it nothing changed.
There are two choices that might help. On your iPhone, tap on Settings > Accessibility > Display & Text Size. Try Smart Invert or Classic Invert. These options reverse the color display. But this will apply to all apps and screens.
